I have a lousy summer cold, so I needed to make something today that was hot and comforting but didn't take a lot of effort. This fit the bill well. I wanted to use a whole pound of pasta, so I doubled the recipe. I used about 36 oz. turkey meatballs (I had 2 open packages), 2 24 oz. pasta sauces, 6 cups low sodium beef broth, and 5 cups water. I added 3 tsp. garlic, 2 tsp. Italian seasoning, and 2 tsp. dried minced onion along with the 2 tsp. basil. I tasted after 6 hours and I didn't have to add any more seasonings. It was nice and thick since I didn't double all the liquid. My daughter and I really enjoyed it, and I'm looking forward to leftovers this week! (P.S. After we ate and it cooled, it really thickened up, so I added a splash of broth to each leftover container. 7 cups of broth total probably would have been perfect.)

Very delicious but I used orzo pasta which is what I had on hand. The family really enjoyed it!! But I think I would like it a tiny bit thicker so I'll probably add less liquids next time

Really tasty!! Will keep, make again and even see about tweaking it to make new soups ( i.e remove pasta, replace meatballs with Italian sausage, maybe add vegetables.)
