  • 1 cup yoghurt (plain)
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon garam masala
  • 1 tablespoon paprika
  • 2 tablespoons oil (unscented)
  • 2 tablespoons lemon juice
  • salt (to taste, I use about 1 teaspoon)
  • 2 tablespoons butter
  • 1 tablespoon oil (unscented)
  • 2 onions (medium, finely diced)
  • 5 whole cloves
  • 4 pods green cardamom
  • 1 inch cassia bark
  • 1/2 star anise
  • 2 inches ginger (piece of, grated)
  • 4 garlic cloves (crushed)
  • 2 tablespoons tandoori masala
  • 1 tablespoon garam masala
  • 1/4 teaspoon cayenne (chilli powder, increase for added heat)
  • 1 teaspoon ground cinnamon
  • 1 tablespoon kasuri methi (dried fenugreek leaves + 1 extra tablespoon)
  • 2 cups tomato puree (or passata *see notes)
  • 1 cup chicken stock (or deglazed pan juices from chicken + 1/2 cup extra, in case sauce is too thick)
  • 1 cup whipping cream (or half and half)
  • 3 tablespoons almond paste (or cashewnut, *see notes)
