Ingredients

  • 500 grams squash (peeled Longue de Nice)
  • 1 tablespoon olive oil
  • 1/2 red onion (chopped)
  • 1 clove garlic (crushed)
  • 1 orange zest (organic)
  • 1 sprig rosemary
  • 30 milliliters orange juice
  • 125 milliliters cider vinegar
  • 2 bay leaves
  • 165 grams brown sugar
  • salt
  • fresh thyme leaves

Directions

  1. 1Finely slice the squash, then cut it into small pieces.
  2. 2Heat the oil in a large saucepan. Add onion, garlic, and cook for 4-5 minutes.
  3. 3Add the orange zest, rosemary, 30 milliliters of juice, vinegar, squash, bay leaves, sugar, and a pinch of salt.
  4. 4Bring to boil then reduce heat and cook for 40 minutes, stirring regularly.
  5. 5Allow to cool and decant into a glass jar. You can keep it for at least 2 weeks in the refrigerator.
  6. 6Before serving, add some fresh thyme leaves.
