Definitely would make it again. I decided to make the pesto from scratch. For meat, I used thinly sliced chicken breast. In addition, I quickly seared the sides of the chicken breasts in a skillet prior to baking them (to prevent from drying out). Wife loved it!

Made it yesterday for dinner and it was delicious. Next time i will try cutting chicken breast in thinner slices becausr putting the whole piece in the recipe turned the out a little unflavored chicken.

Everyone in my house loves this recipe. I used sun dried tomatoes instead of Roma's and also added cheese last 10 minutes the second and third time I cooked it. The cheese gets hard if baked the whole time. If you happen to have any leftovers (I cooked extra for lunch the next day) it heats up nicely in microwave. Hope more people try this recipe. It's cheap, easy, and taste marvelous.

I seasoned the chicken breast with a little bit of salt and pepper just to give it a little bit of tastiness before I slathered it with pesto sauce.
