  • 2 pounds boneless, skinless chicken thighs
  • 2 tablespoons olive oil (Bertolli Mild)
  • 2 bell pepper (red, orange or yellow; sliced)
  • 10 ounces cremini mushrooms ([or white mushrooms] sliced)
  • 1 large onion (thinly sliced)
  • 2 cloves garlic (chopped)
  • 1/4 cup balsamic vinegar
  • 24 ounces pasta sauce (1 jar Bertolli® Parmesan & Romano with Cracked Black Pepper)
  • 2 tablespoons chopped fresh basil leaves (finely)

    Directions

    1. unchecked Season chicken with salt and black pepper. Heat oil in 5-quart saucepan on medium-high heat; add chicken. Cook 2-3 min. on each side or until browned. Remove chicken from skillet.

Stir in vinegar, scraping up any brown bits from bottom of pan. Stir in sauce; bring to boil on high heat. Reduce heat to low; return chicken to pan. Cover. Simmer 20 min. or until chicken is done (165°F). Stir in basil.
    3. Serving suggestion: Serve chicken and sauce over hot cooked rigatoni pasta with garlic bread. Sprinkle with Parmesan cheese.
