  • 3 1/3 cups chickpeas (cooked, drained and rinsed)
  • 1 onion (diced)
  • 2 celery stalks (chopped)
  • 2 carrots (diced)
  • 2 garlic cloves (minced)
  • 2 cups panko breadcrumbs
  • 1/2 cup soy milk (unflavored)
  • 3 tablespoons vegan Worcestershire sauce
  • 2 tablespoons soy sauce (or tamari)
  • 2 tablespoons olive oil
  • 2 tablespoons ground flax seeds
  • 2 tablespoons tomato paste
  • 1 teaspoon liquid smoke
  • 1/4 teaspoon black pepper
  • 1/4 cup tomato paste
  • 2 tablespoons maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce (or tamari)
  • 1 teaspoon paprika

This was fairly easy to make and extremely tasty! I made some modifications and it still turned out awesome. Instead of 2 cans of chickpeas I used 1 can of chickpeas and 1 can of red lentils. I also didn't have any Flax so i didn't use it, as well i used 1 cup of a frozen mix veg in place of the chopped celery since i didn't have that either. It seems this recipe is extremely versatile and will definitely make again!

Turned out a little more mushy than traditional meatloaf, and at first it wasn't a good substitute for meatloaf either, but after I allowed it to cool more than 10 minutes, the texture improved. After grinding a LOT of salt on the meatloaf, the flavor improved dramatically as well.

Delicious! I’ve made it a few times and find that it’s better if I really pack the mix into the loaf pan. I also like to use two pans and not pack them as deep, this way I find it gets a bit drier.

This is an amazing base recipe! However I found that it is quite bland when one follows the given directions. I added mushrooms, cilantro, and Thai basil; as well as higher amounts of tamari and Worcester. I didn't have tomato paste so I did the best I could with fresh tomatoes, I'm not counting out that that had an effect. however with my additions plus a little extra salt, pepper, and coriander this was an amazing meal. so yummy. The Base recipe is an awesome start, but make it your own and you'll love It!

it was ok,,not much flavor to it. i liked it but none of my family did..i think it just took to much time for to little.no offense to the recipie maker. just not my cup of tea

It turned out wonderful! The only thing I would do differently next time is use oatmeal instead of Panko (just apersonal prefrence)

very delicious! i added little salt & paprika to meatloaf mixture, and a little ketchup to the sauce. definitely will make again.
This was great. We liked the flavor, and the consistency was great for us. No problems as long as you don’t over purée the chickpeas.

The flavor was ok but I must have over processed. The texture was like pate. I also didn't care for the glaze, it was too tomato tasting.

it was so good, better than real meat loaf! i wish i took a picture but i ate it too fast! added some minced garlic, basil, thyme, oregano, smoked paprika. very flavorful. will definitely be making this again soon

Turned out very delicious! I accidentally over blended the chickpeas but it turned out just fine!

the flavors are good. I added a few more seasonings like onion and garlic powder for extra flavor. The texture came out a little soft for my liking so I may add more bread crumbs next time.
This was a hit with my family! I added a bit more seasoning to ensure it had tons of flavor. I to let it sit over night before serving ...

Fabulous! The glaze is to die for! I would recommend to cook the onions first though - it would help with the flavor I think. Otherwise it was a good healthy dish.

The texture is very soft and to me it tasted better before going in to the oven as a dip than coming out

Turned out well. The vegetables didn’t fully cook so next time I will either cook before adding to the chickpea mixture or cut the pieces smaller

Very good meal! Would recommend preparing loaf the night before for a firmer, easier to slice and remove serving.

It turned out good but the texture was hard to get used to. Hopefully overnight in the fridge will help. I used ketchup instead of tomato paste which turned out fine.

made this for the vegan side of my family. definitely blend in batches that helped a lot. they loved it
