When making this delicious and refreshingly different vegetable mash, which can be served whenever you would otherwise offer mashed potatoes, you simply boil all the ingredients (except for the butter) with enough water to cover until the potato and zucchini are both knife tender. Easy enough. Then everything is pureed in a blender (or food processor) until creamy and smooth along with (at last) the butter. It goes perfectly with chicken, turkey, pork, beef, and fish.
- 250 grams peas
- 350 grams courgette
- 1 medium potato
- 1 onion (large)
- 1 garlic clove
- 30 grams butter
- salt (to taste)
- ground black pepper (to taste)
- 1 tablespoon cream (for garnish, optional)
- In a saucepan, add the all the ingredients - except the butter - cover with water, and boil for 30 minutes.
- Pour in the blender, add the butter, salt and pepper, and grind until smooth.
