Description

A perfect option for a light lunch, try this Zucchini and Ham Soup with a slice of toasted artisan bread. Grated zucchini is sauteed along with fresh garlic, ham or bacon, onions, and scallions and then added to vegetable broth for a light and savory soup that is filling without being heavy. Season with your favorite spices to taste. For a vegetarian version, omit the ham or substitute mushrooms. This Zucchini and Ham Soup is gluten free.

Ingredients

  • 2 servings
  • 1 tablespoon olive oil
  • 1/4 onions (chopped)
  • 1 garlic cloves (chopped)
  • 3 scallions (chopped)
  • 2 sliced ham
  • coriander powder
  • 1 zucchini (large grated)
  • fresh coriander (to taste)
  • 2 cups vegetable broth
  • salt (to taste)
  • pepper (to taste)
  • 2 slices bread (homemade toasted)

Directions

  1. 1In a medium-sized saucepan, heat the oil, then add the onion, garlic, bacon, a pinch of coriander powder, and saute until the onion is translucent.
  2. 2Add the zucchini, coriander, and cook for two minutes without letting it stick, add the broth and if you find it's not enough add the remaining water, season (be careful in tasting it first, because the ham is already a little salty).
  3. 3Cook for five more minutes and accompany with a roast.
