  • 2 tablespoons oil
  • 1 1/3 pounds ground beef
  • 2 onions (finely diced)
  • 14 ounces diced tomatoes
  • 1/4 cup fresh oregano (chopped, plus additional sprigs, for garnish)
  • 1 cup cheddar cheese (grated)
  • 3 zucchini (sliced)
  • baguette (Sliced, to serve)

Directions

  1. Preheat the oven to 400°F. Heat the oil in a large skillet on high heat. Cook the ground beef for 5 mins, until crumbly. Add the onions and cook for 2 mins. Add tomatoes and oregano and simmer for 5 mins. Season with salt and black pepper. Remove from the heat. Stir in 3/4 cup of the cheese and allow to melt.
  2. Spread 1/3 of the ground beef mixture in a 2-quart baking dish. Top with 1/2 the zucchini slices. Repeat layers. Top with remaining ground beef mixture and 1/4 cup cheese.
  3. Bake for 20 mins. Garnish with additional oregano and serve with sliced baguette.

i like the idea of it but i didnt have the directions of the temperature and time to cook it.

Turned out amazing everyone in the family loved it made some minor changes but I don't think it veered off from the original outcome at all
