Soup can be among the easiest of dishes to prepare, either as a workday dinner or a starter for a party. Take this recipe, which calls for zucchini, potatoes, and goat cheese, plus salt and water, to make a delicate soup that can be creamy white (if you peel the zucchini) or a pale shade of green (if you don't). Either way, the soup is all about the taste of the vegetables.

Ingredients

  • 2 zucchini (large)
  • water
  • salt
  • 1 potato (small, chopped)
  • 100 grams goat cheese

Directions

  1. Wash and chop the zucchini. For white-colored cream, remove the peel; for a cream with a greenish hue leave the skin on.
  2. Place the zucchini in a saucepan with a small amount of water and salt. Add the potato and cook for 15 minutes on medium heat.
  3. Once cooked, drain away the water and puree until smooth. Slowly add some of the water back in, checking for consistency.
  4. Add the goat cheese and puree again.
  5. Strain and serve.

I wasn't too sure how this recipe was going to turn out when I first started making it; but, it turned out fantastic. It provided a very distinctive taste with the combination of zucchini and goat cheese and it was very rich and creamy. I cannot wait to make this 4 star soup for my friends.
