This recipe calls for butter, minced onion, corn kernels, epazote squash, water or chicken stock, chopped zucchini, diced poblano pepper, squash blossoms, and panela cheese (or farmer’s or ricotta cheese). A tasty meal for any day of the week.

Ingredients

  • 1 teaspoon butter
  • 1/4 onion (minced)
  • 1 cup corn (kernels, frozen, thawed)
  • 1 squash (epazote, leaf, optional)
  • 1 liter water (or chicken stock)
  • 1 zucchini (medium, chopped)
  • 1 poblano peppers (seeded and diced)
  • 15 squash blossoms
  • cheese (panela, farmer’s cheese, or ricotta cheese)

Directions

  1. Place a large pot on the stove and add the butter to melt. Add the onion and saute until it becomes transparent. Add the corn and cook for 2 minutes.
  2. Add the water or chicken stock with the epazote squash leaf, if desired. Cover the pot and cook for 10 minutes.
  3. Remove the epazote squash leaf. Add the zucchini, poblano pepper, and squash blossoms.
  4. Cook for 5 minutes and serve with cheese on top.

Don't over cook the zucchini, and roast the corn in the oven with some olive oil before you put it in the soup. It tastes like a healthier version of corn chowder. If you had some cornstarch to a little of the soup's liquid and mix it up, then add it into the pan of soup, it will get thicker like a chowder would be.
