Experience a taste of Italy. With lots of gooey cheese, onion, and tomato sauce, this is a great way to get your family to eat vegetables. This side only takes about 15 minutes to prepare. They also make a great snack to keep your energy up during the day.

Ingredients

  • 2 zucchini
  • water
  • salt
  • 1 bell pepper (chopped)
  • 1/2 onion (chopped)
  • 1 leek (chopped.)
  • 4 tablespoons tomato sauce
  • cheese (grated)

Directions

  1. Cut the zucchini lengthwise in halves and cook in water with salt for 7 minutes.
  2. In a saucepan saute the pepper, onion, and leek. Add the tomato sauce.
  3. Once the zucchini are done, drain and hollow them out with a spoon. Add the removed insides of the zucchini to the vegetables and stir.
  4. Fill the zucchini with the vegetables, add grated cheese on top and bake for a few minutes until the cheese melts.

If you thought zucchini was just for sweet bread, guess again. It has stepped out as one of the most versatile veggies around. It literally takes on the flavor of whatever it is cooked with. This recipe is a prime example of its flexibility. I loved it, and it tasted amazing.
