Zucchini Stuffed with Vegetables

Description

Experience a taste of Italy. With lots of gooey cheese, onion, and tomato sauce, this is a great way to get your family to eat vegetables. This side only takes about 15 minutes to prepare. They also make a great snack to keep your energy up during the day.

Ingredients

  • 2 zucchini
  • water
  • salt
  • 1 bell pepper (chopped)
  • 1/2 onions (chopped)
  • 1 leeks (chopped.)
  • 4 tablespoons tomato sauce
  • cheese (grated)

Directions

  1. 1Cut the zucchini lengthwise in halves and cook in water with salt for 7 minutes.
  2. 2In a saucepan saute the pepper, onion, and leek. Add the tomato sauce.
  3. 3Once the zucchini are done, drain and hollow them out with a spoon. Add the removed insides of the zucchini to the vegetables and stir.
  4. 4Fill the zucchini with the vegetables, add grated cheese on top and bake for a few minutes until the cheese melts.
