Zucchini is an extremely versatile vegetable, they can be roasted, baked into sweets, or stuffed as is the case in this recipe. Cheese, mint, basil, and cilantro come together for a bold and flavor-packed filling. This dish is perfect to enjoy in the summer when zucchini is at its peak and you can pick herbs fresh from the garden.

Ingredients

  • 4 zucchini (round)
  • 500 grams cheese (Brousse)
  • 1 egg
  • 6 mint sprigs
  • 1/2 bunch basil
  • 1/2 bunch coriander
  • 4 tablespoons heavy cream
  • 1 shallot (finely chopped)
  • salt
  • ground black pepper

Directions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Clean the zucchini, and cook for 12 minutes in a pan of boiling salted water.
  3. Drain and let cool.
  4. Cut the "hat" of each zucchini.
  5. With a spoon, scrape out each zucchini, being careful not to pierce the vegetable.
  6. Remove all the seeds.
  7. In a bowl, mix the egg with the chopped herbs, crumbled bush, cream, shallots, and salt and pepper.
  8. Stuff each zucchini with a spoon, then put the cap on each zucchini.
  9. Place the zucchini in a baking dish and bake for about 15 minutes.
