Zucchini is an abundant vegetable that is both sweet, hearty and provides a wonderful texture to any dish. If you need a side dish that will wow with flavor and leave your taste buds in a dreamy, creamy daze, then try this Zucchini Salad with Cream Cheese. The flavor is indescribably decadent.   • 2 tablespoons olive oil
  • 2 zucchinis (medium, cut into thin lengthwise strips)
  • 4 pumpkin (blossoms)
  • 1 lemon
  • 1 teaspoon olive oil
  • salt
  • ground black pepper
  • 1/2 cup cream cheese


  1. Heat 1 tablespoon of olive oil in a skillet and add the zucchini.
  2. Saute each side for up to 2 minutes. Remove the zucchini and set aside.
  3. Place the zucchini in a bowl and add the pumpkin blossoms, lemon juice, olive oil, salt, black pepper, and cheese. Mix everything well and serve on a plate.

Zucchini is one of my favorites but I’ve never thought of eating a squash blossom of any kind. I’ll admit I was skeptical but when all the flavors came together, it was pretty good. The varying textures helped me to brave that of the squash blossom. I’m sold on this one!
