Ingredients

  • 2 cups zucchini (chopped)
  • 2 cups tomatoes (chopped)
  • 1 onion (medium, chopped)
  • 2 cloves garlic (chopped)
  • salt (to taste)
  • pepper (to taste)
  • 1 cup mozzarella (shredded)
  • 2/3 cup bisquick (reduced fat)
  • 1/4 cup milk
  • 4 egg whites

Directions

  1. Preheat oven to 400 degrees.
  2. Spray a 9 inch pie platre with cooking spray. set aside.
  3. Saute garlic and onions until onion is translucent.
  4. Add Zucchini, Tomatoes, salt and pepper, continue to saute until zucchini are soft.
  5. Turn up the heat until ALL the liquid is gone. set aside.
  6. Note: the saute mixture can be made ahead of time. Just make sure you drain any liquid that forms.
  7. In a large bowl, beat egg whites, then add milk, cheese and bisquick.
  8. Stir to combine.
  9. Now add the drained zucchini mixture and stir well.
  10. Pour into pie plate.
  11. Cook for about 30 minutes or until a knife comes out clean when inserted into the center.
