Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup parmesan cheese (grated)
  • 1/4 cup bread crumbs
  • salt
  • ground black pepper
  • 2 zucchini (medium)

Directions

  1. Preheat the oven to 230 degrees Celsius or 450 Fahrenheit.
  2. Mix the oil, cheese, breadcrumbs, and salt and pepper to taste.
  3. Slice the zucchini into 1/2-centimeter rounds. Cover both sides of the rounds with the cheese mixture.
  4. Place on a greased baking tray and bake for 25 to 30 minutes until golden brown and crispy.

Low carb dieters will love this snack that can be cooked longer to have a crunchy chip consistency. I have made it several times and played around with the seasonings. Each time it was always great.
