Ingredients

  • 3 medium zucchini
  • salt
  • pepper
  • 2 cloves (minced)
  • 2 tablespoons basil
  • 1 egg (slightly beaten)
  • 1 cup panko (break crumbs)
  • 1/2 cup parmesan
  • olive oil
  • marinara sauce

Directions

  1. Grate zucchini and lay flat on a towel. Wring zucchini in towel to drain all of the excess water out of it. Pat dry.
  2. Transfer zucchini to a bowl and combine with salt and pepper, garlic, basil, egg, bread crumbs, and cheese. Mold into balls.
  3. Heat oil in skillet over medium. Fry the balls on all sides, about 10 minutes. Pour sauce over meatballs and simmer for about 5 minutes. Serve over noodles!
