Pizza is always a favorite, but it is admittedly not the healthiest choice. In this recipe, instead of traditional crust that is full of carbs, thick slices of zucchini are used as the base. A simple tomato sauce, some cheese, and oregano are the perfect toppings and work well with the delicate flavor of the zucchini. Along with being a healthy option, this recipe is also super speedy to prepare since you do not have to wait for the dough to rise or be rolled out.

Ingredients

  • 1 zucchini (sliced thin)
  • 1 tablespoon vegetable oil
  • tomato sauce
  • fresh oregano (minced)
  • cheese (grated)

Directions

  1. Add the oil to a skillet on medium heat. Add the zucchini and sear, but do not cook completely.
  2. Place on a baking sheet and add the toppings as you would with a pizza. Top with tomato sauce, oregano and grated cheese.
  3. Bake for a few minutes until the cheese melts and serve.

These little mini pizzas were incredible! I loved that the zucchini did not turn out mushy like it usually does when I cook it. My husband scarfed down a couple of them before I even at one. It had the perfect amount of flavor. A true 5 star recipe that I can make for a weekend treat.
