Zucchini was a big problem at our house because we planted way too much. This recipe was a great way to use up some of the zucchini. Next time, I think I will substitute carrots for celery and parboil the zucchini first. This dish will be great to make ahead of time and pop into the oven when we have guests over or need a dish to take to someone who is sick.
