  • 2 1/2 pounds zucchini (cut into quarters)
  • 10 ounces grape tomatoes (cut in halves or 2 large tomatoes, diced)
  • 7 garlic cloves (crushed)
  • 1/2 cup parmesan cheese (shredded)
  • 1 teaspoon dried basil (oregano or organic Italian seasoning)
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/3 cup parsley (or basil, finely chopped)

This is a great recipe! I make it twice a month usually. I add rotini noodles and pasta sauce to make it a meal it's very delicious!!!

It was very good dish. Perfect for our vegetarian dinner. We love both parmezan and garlic so we will definitely cook it again.

It was ok. There are better zucchini and tomato recipes out there. It would be better with another squash mixed in, or just opt for ratatouille instead.

Made this as written and it was absolutely delish!! will be adding this to my regular rotation. As a Pescetarian its sometimes hard to find new and exciting recipes to go well with fish and seafood. this one is definitely a winner. Paired with some baked talapia and a salad
