Torta Paradiso — or Italian Paradise Cake — is light and airy like chiffon cake, but it's also indulgent given the addition of eggs and butter. Meanwhile, lemon zest brightens the flavor of the vanilla-spiked batter. Use a buttered and floured springform pan if you have one handy. After removing the cake from the oven, let it cool before sifting a generous amount of powdered sugar on top.

Ingredients

  • 250 grams flour
  • 250 grams potato starch
  • 250 grams sugar
  • 3 eggs (medium)
  • 150 grams milk
  • 100 grams butter
  • grated lemon peel
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 50 grams cocoa (powdered)
  • 50 grams dark chocolate chips
  • powdered sugar

Directions

  1. Preheat the oven to 180C.
  2. Combine the flour, potato starch, sugar, eggs, milk, butter, grated peel of 1 lemon, and the vanilla extract together and divide the batter into 2 bowls.
  3. Add the powdered cocoa to one bowl and the chocolate chips to the other.
  4. Butter a bundt or tube pan and begin adding the two types of batter in layers, first one type and then the other, and so on.
  5. Sprinkle the top layer with powdered sugar.
  6. Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool the cake completely before removing it from the pan, sprinkle with powdered sugar, and serve.

I liked the alternating flavors of vanilla and chocolate in this cake. Easy enough for a novice level baker, it doesn't have a variety of uncommon ingredients to contend with
