Ingredients

  • 500 grams all-purpose flour
  • 12 grams yeast (brewer’s)
  • 1 1/2 teaspoons salt
  • 1 teaspoon barley (malt)
  • 370 milliliters warm water

Directions

  1. Dissolve the yeast in the water with the malt barley.
  2. Place the flour, sifted with the salt, in a large bowl and add the yeast mixture, stir with a fork until the mixture is sticky and coarse.
  3. Sprinkle the mixture with flour, cover the bowl with plastic wrap and let it rise for 90 minutes.
  4. After 75 minutes, turn the oven on to 240C and place the baking sheet inside.
  5. Carefully transfer the dough onto a work surface, keeping the flour side up.
  6. Cut the dough in half, then cut each part into 4 pieces.
  7. Carefully place the 8 rolls on the hot baking sheet and bake for approximately 30 minutes until golden.
  8. Remove the rolls from the oven and let cool.
