These extremely flavorful roasted chicken thighs make an easy weeknight dinner.

- 2 lb. bone-in, skin-on chicken thighs (2 lb. is about 4 thighs)
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 Tbsp. extra-virgin olive oil
- 1 1/2 tsp. za'atar (seasoning)
- 1/2 lemon (cut into 3-4 wedges)

Directions
- Preheat the oven to 400°F.
- Season the chicken thighs on both sides with the salt and black pepper. Arrange the thighs skin-side up in a 9-inch-square baking dish.
- Drizzle the olive oil over the chicken thighs and rub it evenly over the skin. Sprinkle the za’atar seasoning evenly over the chicken. Squeeze the juice from the lemon wedges over the chicken, and then arrange the lemon wedges between the chicken thighs.

Nice easy recipe. I cut up the chicken and put it on romaine leaves with other veggies like onions, tomatoes, and pickles with a tahini sauce.
