A tasty breakfast tart, this egg tart is made with yogurt and stuffed with plenty of ham and cheese. Substitute mushrooms or other vegetables for the ham if you are vegetarian. Make your own puff pastry or buy it premade.

Ingredients

  • 1 puff pastry (rectangular)
  • 200 grams ham (cut in small pieces)
  • 5 eggs
  • 2 natural yogurts
  • salt (to taste)
  • nutmeg (to taste)
  • cheese (Emmental, to taste)

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. Roll out the dough, and place in baking pan lined with parchment paper. Prick the bottom with a fork.
  3. Cover the base with the ham.
  4. In a bowl, beat the eggs well. Add the yogurt, and beat again. Add salt and nutmeg to taste. Mix, and pour evenly on top of the ham.
  5. Cover the tray with Emmental cheese.
  6. Bake to a gratin. Serve with a salad.

I never thought to use yogurt with ham and cheese, but this tart tastes great with this combination. The pastry is nice and flaky and the inside is smooth. I didn't use much nutmeg because I didn't know how it would taste overall, but the little I used enhanced the dish.
