Yogurt cakes are easy to make and have an elegant texture that makes them a wonderful dessert to serve on any occasion. This yogurt sponge cake is made with natural greek yogurt and sunflower or olive oil instead of butter for dense cake. A very basic recipe, you can also add your favorite flavors to the cake batter before baking such as lemon or orange zest or a splash of vanilla or almond extract.

Ingredients

  • 1 cup greek yogurt (natural)
  • 1 cup sugar
  • 3 eggs
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 tablespoon sunflower oil (or olive oil)

Directions

  1. Pre-heat the oven to 180C.
  2. Grease or line a cake pan or loaf tin
  3. Place the yogurt, sugar, and eggs in a bowl and beat together well.
  4. Add the flour and baking powder and gently stir with a spatula until all the ingredients are completely blended.
  5. Add the oil and stir again with the spatula.
  6. Transfer to the cake pan and cook for 25 minutes or until a skewer inserted in the center comes out clean.

I used 3 cups of sugar and it was wonderful
It is really nice, I enjoyed it and the bottom part was nice and crispy for desert..👍🏽

This recipe was a hit for my birthday! The only thing I would change would be less baking time. But the cake was very yummy.... I appreciate you way of writing...

Unfortunately my opinion is like that of Irene..... It was not sweet enough and turned out very heavy and tasteless ... The mix looked good and it rose well but the flavour and textura failed.....

It wasn't sweet enough and you could taste the flour. It needs more wet ingredients as it went into the pan looking like cookie dough. Maybe some orange or lemon rind.
