Bananas and raisins lend flavor and texture to these moist, sweet muffins, which feature yogurt to keep them light and moist. A dash of powdered sugar on top lends a special touch. Line your muffin tin with muffin cups to make cleanup easier. Store the baked muffins in an airtight container on the counter for up to three days.

Ingredients

  • 150 grams flour
  • 8 grams baking powder
  • 60 grams sugar
  • salt
  • 1 egg
  • 100 grams vegetable oil
  • 125 grams plain yogurt
  • 2 bananas (ripe, or any other fruit in season, sliced)
  • 50 grams golden raisins (soaked in hot water)
  • powdered sugar

Directions

  1. Preheat the oven to 180 degrees Celsius.
  2. In a bowl, mix the flour, baking powder, sugar, and a pinch of salt.
  3. In a separate bowl, mix the egg, oil, and yogurt.
  4. Combine the dry ingredients with the liquid ingredients, and mix until smooth.
  5. Add the bananas and raisins and mix thoroughly.
  6. Pour the mixture into small paper muffin cups.
  7. Bake at 180 degrees Celsius for 25 minutes. Test with a clean knife ot toothpick.
  8. Allow to cool and sprinkle with powdered sugar.

Bananas and raisins combine two classic tastes for these fluffy bites! We’ve tried other seasonal fruits but come back to the bananas. You can substitute melted butter for the vegetable oil if you prefer added richness. These muffins have become a regular in our kids’ lunch boxes!
