Pretty good. I added a TB of seasoning, both to the batter and the finished croquettes. Added carrots for color and variety of flavor. Most of the flaws are due to me being new to frying anything.

These were tasty- and great for dipping- but lacked much flavor on their own. I’d definitely add a decent bit more seasoning/flavor to the batter, maybe some cayenne pepper, paprika, etc.

I have cooked this a few times now. Everyone is always amazed by how great yellow squash can taste. Big hit!

I added 2 tablespoons of panko breadcrumbs. It's kind of bland. It needs something. Good way to use your yellow squash straight from the garden. I might add pepper flakes next time.

Wonderful! I made my fritters a little too big so some of the insides were still uncooked. Next time I will make them smaller but it was still soooooooo delicious!

Delicious, and healthy. I added a purple carrot, and used olive oil. Fantastic, and I will make this again!
