- 4 shallots (large)
- 4 garlic (large full heads of)
- 1 piece fresh ginger
- 15 whole chili peppers (dried arbol)
- 1 1/2 Tbsp. salt
- 3 Tbsp. turmeric
- 3 Tbsp. mild curry powder
- 2 tsp. ground coriander (roasted)
- 3 Tbsp. lemongrass (paste)
- 1/4 cup cilantro leaves (packed, and stems)

Directions
- Preheat the oven to 350 degrees.
- Remove the outer coating of the shallots and ginger. Slice the ginger in thin slices.
- Drizzle with oil and wrap the shallots in foil.
