Ingredients

  • olive oil
  • 1 carrot (peeled and chopped.)
  • 1 turnip (peeled and chopped.)
  • 1 parsnip (peeled and chopped.)
  • 1 cube chicken bouillon
  • whipping cream (10 cl.)
  • beans (Tonka)
  • 8 scallops (fresh)

Directions

  1. In a skillet heat a tablespoon of olive oil and brown the vegetables.
  2. Add a cube of chicken bouillon and a liter of water.
  3. Season with salt and pepper.
  4. Cover and let it simmer for about 30 minutes
  5. In a blender, process the vegetables, the broth and the cream. Check the seasoning.
  6. Add grated tonka beans.
  7. In a skillet, sauté scallops until browned on both sides.
  8. To serve, place 2 scallops on each soup bowl.
  9. Pour the soup and serve.

This soup was filled to the brim with tons of vegetables, fresh not frozen, and hearty tonka beans that warms your heart with every slurp. Medium-thickness, well-seasoned-, and easy to make.
