Ultra-rich and velvety, this soup starts with a brothy base, to which egg yolks, heavy cream and white wine are added and warmed over a double boiler until creamy. Day-old semmel bread is turned into cinnamon-scented croutons, which are sprinkled on top for textural crunch. You can use any crusty bread you have on hand.

Ingredients

  • broth (1/2 lt.)
  • 4 egg yolks
  • 2 cups heavy cream
  • 1 roll (day-old, Semmel, cut into cubes)
  • butter
  • ground cinnamon
  • 10 ounces white wine (fragrant variety)

Directions

  1. Toast the bread in a pan with 2 tablespoons of butter and sprinkle it with cinnamon.
  2. Add the egg yolks, the heavy cream, and the white wine to the hot broth in a medium saucepan over a double boiler or on very low heat, and beat with a whisk until the mixture is creamy.
  3. Place the soup in warm soup bowls, top with the croutons, and sprinkle with some ground cinnamon.
  4. Serve immediately.

I prepared this recipe for an outing over the weekend and I had people begging me for instructions to it all night long. The soup was very flavorful and the cinnamon croutons were absolutely exquisite; really brought out the flavor of the soup. There is no way I could resist making this 5 star soup again.
