Description

Ultra-rich and velvety, this soup starts with a brothy base, to which egg yolks, heavy cream and white wine are added and warmed over a double boiler until creamy. Day-old semmel bread is turned into cinnamon-scented croutons, which are sprinkled on top for textural crunch. You can use any crusty bread you have on hand.

Ingredients

broth (1/2 lt.)
4 egg yolks
2 cups heavy cream
1 rolls (day-old, Semmel, cut into cubes)
butter
ground cinnamon
10 ounces white wine (fragrant variety)

Directions

1Toast the bread in a pan with 2 tablespoons of butter and sprinkle it with cinnamon.
2Add the egg yolks, the heavy cream, and the white wine to the hot broth in a medium saucepan over a double boiler or on very low heat, and beat with a whisk until the mixture is creamy.
3Place the soup in warm soup bowls, top with the croutons, and sprinkle with some ground cinnamon.
4Serve immediately.
