  • 4 chicken thighs (boneless, skin-on, about 1 1/2 pounds)
  • 4 chicken drumsticks (about 1 1/2 pounds)

  • freshly ground black pepper
  • 5 slices center cut bacon (thick, cut into 3/4-inch dice)
  • 6 shallots (large, halved)
  • 6 cipollini onions (small, peeled)
  • 2 large carrots (halved and cut into 3/4-inch chunks)
  • 2 cloves garlic (chopped fine)
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • 2 cups white wine (Pinot Grigio, Sauvignon Blanc or Riesling)
  • 3 cups low sodium chicken broth
  • 1/4 teaspoon lemon zest
  • 1/2 cup heavy cream (or Half and Half)
  • 1 tablespoon leaf parsley (fresh flat-, chopped, for garnish, optional)

    Directions

    1. Preheat oven to 300 degrees F.
    2. Season chicken with salt and pepper and heat 2 tablespoons of olive oil in your KitchenAid® 6.0Qt Cast Iron Cookware.
    3. Place chicken in the pot skin-side down in an even layer and sear for 10-13 minutes, flipping once, until chicken is golden brown, transfer to a plate.
