  • 30 grams egg yolk (from about 2 eggs but please use the exact weight)
  • 375 grams bread flour (with 12% protein)
  • 12 grams milk powder
  • 35 grams caster sugar
  • 3 grams salt
  • 30 grams unsalted butter (softened at room temperature)
  • 1 1/4 tsp. yeast
  • 380 grams water (at mild room temperature, about 25°C)
  • 50 grams egg yolk (from about 3 eggs but please use the exact weight)
  • 650 grams bread flour (with 12% protein)
  • 20 grams milk powder
  • 40 grams caster sugar (original is 60g and can be reduced to 40g.)
  • 4 grams salt
  • 50 grams unsalted butter (softened at room temperature)
  • 2 tsp. yeast
  • 4 Tbsp. cream (with 35% fat)
  • 2 tsp. icing sugar (to dust)
  • butter (extra, or vegetable oil spray to grease baking tray or loaf pans)
  • bread flour (extra, for dusting and shaping but please use the minimal amount)
