  • 6 sprigs fresh basil
  • 6 black peppercorns
  • 4 leaves gelatin (soaked in cold water until softened)
  • 450 grams strawberries (hulls removed)
  • 115 grams caster sugar
  • dry sherry (splash)
  • 8 strawberries (large, hulls removed, halved)
  • 250 milliliters whipping cream (whipped to stiff peaks)
