Wild Rice is front and center in this delicious salad. Wild Rice is naturally gluten free and is rich in vitamins, protein, and fiber making it a dynamic grain to add to your diet. Low in fat, wild rice is a great alternative to white rice. Combining all of our favorite fresh flavors, this Wild Rice Salad features fresh avocado and pomegranate seeds in a zesty citrus dressing. Serve warm or cold, this salad is delicious either way!

Ingredients

  • 3 tablespoons chives (chopped)
  • 1 teaspoon orange zest (or lemon zest)
  • 1 tablespoon honey
  • 2 tablespoons orange juice (or lemon juice)
  • 1/2 teaspoon ginger powder (or grated fresh ginger)
  • salt
  • ground black pepper
  • 2 tablespoons olive oil
  • 1 1/2 cups black rice (cooked according to package instructions)
  • 1 cup berries (pomegranate)
  • 1 avocado
  • 1 carrot (sliced and slightly cooked)
  • 2 strips red pepper
  • 1 tablespoon chives (chopped)

Directions

  1. In a small bowl, mix 2 tablespoons of chives, orange zest, orange juice, honey, ginger, salt, and black pepper.
  2. Mix with olive oil. Set aside.
  3. In a bowl, mix the cooked rice with the pomegranate berries, avocado, red pepper, carrot slices, and 1 tablespoon of chives.
  4. Add the sauce only when serving, season with salt and pepper to taste, if necessary.

The pomegranates in this 4 star recipe are always fresh and never frozen when I make it and it provides a sweetened touch to the avocado mixed within it. As always the wild rice is cooked perfectly with the desired amount of fluffiness.
