Description

Wild Rice is front and center in this delicious salad. Wild Rice is naturally gluten free and is rich in vitamins, protein, and fiber making it a dynamic grain to add to your diet. Low in fat, wild rice is a great alternative to white rice. Combining all of our favorite fresh flavors, this Wild Rice Salad features fresh avocado and pomegranate seeds in a zesty citrus dressing. Serve warm or cold, this salad is delicious either way!

Ingredients

3 tablespoons chives (chopped)
1 teaspoon orange zest (or lemon zest)
1 tablespoon honey
2 tablespoons orange juice (or lemon juice)
1/2 teaspoon ground ginger (or grated fresh ginger)
salt
ground black pepper
2 tablespoons olive oil
1 1/2 cups black rice (cooked according to package instructions)
1 cup berries (pomegranate)
1 avocado
1 carrots (sliced and slightly cooked)
2 strips red pepper
1 tablespoon chives (chopped)

Directions

1In a small bowl, mix 2 tablespoons of chives, orange zest, orange juice, honey, ginger, salt, and black pepper.
2Mix with olive oil. Set aside.
3In a bowl, mix the cooked rice with the pomegranate berries, avocado, red pepper, carrot slices, and 1 tablespoon of chives.
4Add the sauce only when serving, season with salt and pepper to taste, if necessary.
