Description

The crust for this pizza is made from wild rice for an interesting and filling dish. This recipe is a great way to use leftover rice that you have hanging out in the refrigerator. The crust is topped with a combination of mozzarella cheese, spicy arugula, and red pepper for a healthy and flavorful meal. If you want to switch up the toppings a bit, go for it! The possibilities are endless.

Ingredients

  • olive oil
  • 1 cup wild rice (Oriente World, cooked)
  • 5 tablespoons water
  • 1 egg whites
  • 1 garlic cloves
  • 1 tablespoon flax seeds
  • 2 strips dried tomatoes (in olive oil)
  • salt
  • ground black pepper
  • 2 tablespoons mozzarella cheese (grated)
  • 1 red pepper (cut in strips)
  • arugula

Directions

  1. Pre-heat oven to 200 degrees Celsius.
  2. Use olive oil to grease an ovenproof skillet well, sides and bottom.
  3. Place the wild rice, water, egg white, garlic, flax seed, and dried tomatoes in the blender, and mix to a thick paste.
  4. Season with salt and pepper, and pour the mixture into the pan spreading it well.
  5. Bake for 15 minutes, remove from oven, and using a spatula, turn the dough on the other side and bake for another 15 minutes.
  6. The pizza is ready when the dough starts to separate from the sides of the pan.
  7. Remove from oven, sprinkle with grated mozzarella cheese, strips of red pepper, and arugula leaves.
  8. Cut and serve.
