Gazpacho is traditionally made with fresh summer vegetables such as tomatoes and peppers, but this version strays from the classic by using mushrooms. Wild mushrooms are sauteed then blended with chicken stock and oil to create a delicate and smooth soup. Just like the traditional gazapacho, this version is served chilled which makes it a great choice to enjoy in the summer when it is hot out. Serve the soup with some toasted slices of bread.

Ingredients

  • 50 grams breadcrumbs
  • 50 milliliters red wine vinegar
  • olive oil
  • 600 grams wild mushrooms
  • salt
  • ground black pepper
  • 750 milliliters chicken broth
  • ground cumin
  • water

Directions

  1. In a bowl, place the breadcrumbs and soak them in vinegar.
  2. In a skillet, add a tablespoon of oil on medium heat and saute the mushrooms for 1 minute. Mix the breadcrumbs with the mushrooms, season with salt and pepper and refrigerate for 4 hours.
  3. Remove the mixture from the refrigerator and place in the blender. Puree until smooth and then add the chicken broth. Puree again.
  4. Slowly add 200 milliliters of oil while still blending. Add water if needed to acquire the desired consistency.
  5. Season with salt, black pepper, and cumin to taste. Refrigerate once more and serve chilled.

I made this wild mushroom gazpacho for my co-workers last week and we were all very impressed with how great it tasted. It was dripping with flavor and the mushrooms gave it a great meaty taste. It didn't require a lot of work and it was super easy to make. I will make it for them again soon and would rate it at a big 5 stars.
