Wild Asparagus and Shrimp Risotto

Description

This meal will be ready in just 35 minutes and is a great appetizer. The wild asparagus is tender and colorful and is very juicy. The chopped onions added with the shrimp makes a savory flavor. After being cooked in a skillet the rice adds a great texture to the dish.

Ingredients

  • olive oil
  • 1/2 onions (peeled and diced)
  • 15 shrimp (peeled and deveined)
  • 10 wild asparagus (cleaned and cut in pieces)
  • vegetable broth
  • fish stock
  • 150 grams rice
  • salt

Directions

  1. Add a tablespoon of oil to a skillet on medium heat.
  2. Saute the chopped onion along with the shrimp shells. After a few minutes, remove the tails.
  3. Add the asparagus to the onions and saute for 5 minutes.
  4. Add the rice to the skillet and saute for 5 minutes.
  5. In a pot, heat several cups of vegetable broth and fish stock. Bring to a simmer.
  6. Slowly add the broth to the rice, constantly stirring to loosen up the starch. Add salt as needed
  7. With 5 minutes to go, add the shrimp. Cook until the shrimp are cooked.
  8. Plate and serve.
