Description

Ingredients

  • 1 tablespoon butter
  • 2 leeks
  • 500 grams wild asparagus
  • 1 potatoes
  • 100 grams shrimp
  • 1 liter vegetable broth
  • salt
  • ground white pepper
  • 2 tablespoons heavy cream

Directions

  1. Melt the butter in a skillet on medium heat. Saute the leek for 3 minutes.
  2. Add the asparagus and cook for another 3 minutes.
  3. Add the potato, shrimp, broth, and a pinch of salt and white pepper.
  4. Add the ingredients to a blender and puree until smooth. Strain the sauce and add the cream. Mix well.
  5. Garnish with additional sauteed wild asparagus or shrimp.
