Ingredients

1 eggs
1 teaspoon vanilla
1/2 cup agave nectar
1/3 cup vegetable oil
1/2 orange
1/4 cup milk
1 1/2 cups zucchini (grated)
1 1/4 teaspoons baking soda
1 pinch salt
1 1/2 cups whole wheat flour
1 teaspoon cinnamon (ground)
1/4 teaspoon nutmeg (ground)
1/4 teaspoon ginger (ground)
1 cup nuts (ground)

Directions

1Preheat the oven to 180C.
2Mix the egg, vanilla, agave nectar, vegetable oil, orange juice, and milk in a large bowl.
3Add the zucchini and beat with a whisk until the ingredients are completely mixed.
4Mix the baking soda, salt, whole wheat flour, cinnamon, nutmeg, and ginger in a medium bowl.
5Add the mixed flour to the large bowl and beat until the flour is no longer visible.
6Add the nuts, pour the mixture into a muffin tray, and place the tray in the oven. Bake for 15 to 20 minutes.
7Remove the muffins from the oven, let them cool completely, and serve.
