Ingredients

  • 250 grams whole wheat spaghetti
  • salt
  • 500 grams mushrooms (sliced)
  • 1/2 yellow onion (thinly sliced)
  • 2 tablespoons sesame oil
  • 4 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame seeds
  • 1 tablespoon maple syrup

Directions

  1. Cook the pasta in water with salt until al dente.
  2. Heat the sesame oil in a wok or skillet and saute the onion for 3 minutes. Add the mushrooms and saute for 2 more minutes.
  3. Add the soy sauce, rice vinegar, and maple syrup. Saute for 5 minutes until the vegetables are firm, but cooked. Remove from heat.
  4. When the pasta is ready, drain it, and add to the wok. Mix well and sprinkle with sesame seeds. Serve immediately.

This is a great way to create stir fry at home. The soy sauce and sesame oil give it flavor while the maple syrup gives it that sweet taste to balance everything out in the end. Add a meat of your choice if you want to get away from the vegan dish. I personally love it with beef strips.
