Ingredients

2 cups whole wheat pasta
1/2 red bell pepper (chopped)
1/4 onions (cut into long strips)
2 tomatoes (minced)
1 tablespoon capers (minced)
2 jalapeno chilies (minced)
1 cup queso panela (cut into medium pieces, you can substitute it with goat cheese or feta cheese)
1 tablespoon red wine vinegar
2 tablespoons olive oil
salt (as desired)
pepper (as desired)
1 lemon

Directions

1Heat water in a cooking pot on high until it boils.
2Boil the pasta for 7 minutes and remove it from the pot. Strain and rinse with cold water.
3Add the red wine vinegar, salt, pepper, and lemon zest to a small bowl, and pour the olive oil in while mixing the ingredients.
4Add the red bell pepper, onion, tomatoes, capers, jalapeño peppers, panela cheese, and the pasta to a salad bowl.
5Add the dressing to the salad bowl, mix, and serve.
