Description

There are so many different kinds of cake out there, how does someone decide which one will be the one? Easy. This Whole Orange and Coconut Cake provides the tanginess of the orange with the sweet of the coconut and the creaminess of a homemade cake. There may only be eight ingredients in the decadent dessert, but it will be a family favorite for years to come.

Ingredients

  • 1 orange (large, juicy)
  • 4 eggs
  • 1 cup oil
  • 1/2 cup milk
  • 2 cups sugar
  • 2 cups flour
  • 1 tablespoon yeast
  • 2 tablespoons grated coconut

Directions

  1. 1Preheat oven to 350 degrees Fahrenheit.
  2. 2Wash the orange thoroughly, cut in quarters, and remove seeds.
  3. 3Place in the blender, or use a hand blender, to grind the orange together with eggs, oil, milk and sugar.
  4. 4Mix for a few minutes.
  5. 5In a bowl, sift the flour with the yeast, add orange mixture and grated coconut.
  6. 6Stir to well mixed.
  7. 7Place the cream in a buttered or silicone mold, and bake for 35 to 40 minutes.
  8. 8Do the toothpick test which, when withdrawn, should be dry.
  9. 9Remove, let cool, and baste with a bit of orange juice.
