Whole Grilled Chicken with Chorizo-Bean Salad

Ingredients

  • chicken (Marinated)
  • 2 teaspoons lemon zest
  • 1 handful oregano leaves
  • 2 teaspoons olive oil
  • 3 1/2 pounds whole chicken (butterflied)
  • bean salad (Chorizo-)
  • 2 chorizo sausages (sliced)
  • 13 1/2 ounces cannellini beans (drained and rinsed)
  • 13 1/2 ounces lima beans (drained and rinsed)
  • 3 1/2 ounces baby arugula
  • 2 spring onions (thinly sliced)
  • 2 tablespoons lemon juice
  • 2 tablespoons extra-virgin olive oil

Directions

  1. Preheat grill.
  2. Combine lemon zest, oregano and olive oil. Season then rub over chicken to coat. Cook chicken, skin-side down, over medium-low heat for 20 mins. Flip over and cook for another 20 mins, or until cooked through.
  3. Meanwhile, to make the salad, grill or sauté chorizo for 2 mins, until crisp. Toss with beans, arugula, spring onions, lemon juice and extra virgin olive oil. Season.
  4. To serve, cut chicken into 4 pieces. Serve with chorizo-bean salad.
