Ingredients

  • 2 whitefish fillets (large)
  • 100 grams bread crumbs
  • 2 garlic cloves (minced)
  • 1 lemon zest
  • 1 tablespoon fresh chives (chopped)
  • 1 tablespoon parsley (chopped)
  • 1 teaspoon dill
  • 60 grams softened butter
  • 1 teaspoon dill (from "Espiga")

  • salt
  • ground black pepper

Directions

  1. Preheat oven to 220 degrees Celsius.
  2. Place the the fish fillets in baking dish greased with olive oil. Season with salt and pepper, set aside.
  3. Mix the breadcrumbs with the finely chopped garlic, lemon zest, and herbs.
  4. Mix everything with butter using your fingers, for a crumb mixture.
  5. Cover the fish with the mixture, pressing well on the fish.
  6. Drizzle with lemon juice, and bake for about 20 minutes, or until crust is golden brown.
  7. Serve with a green salad, to taste.

I could not get enough of this fish. The crust is so delicious. I love that you bake the fish because there is no standing at the stove tending to it. This will be made weekly in my house with whatever fish fillets we have on hand.
