Description

Drawing its origins back to the semi-autonomous region of Galicia on the northern Spanish, this white cake requires just 4 simple ingredients: egg whites, sugar, sieved flour, and whipping cream. This cake has a pure white look as it uses only egg whites. The egg whites are whipped until stiff to create a cake with a light and fluffy texture. This cake is perfect for afternoon coffee or tea time with a friend. Bake time on this lovely cake is 40 minutes.

Ingredients

  • 8 egg whites
  • 435 grams sugar (+ extra for sprinkling)
  • 350 grams flour (sieved)
  • 350 milliliters whipping cream
  • butter (for greasing)

Directions

  1. Pre-heat the oven to 180C.
  2. Grease a cake pan (20 cm x 22 cm) with butter.
  3. Line with parchment paper and grease again.
  4. Whisk the egg whites until stiff, adding the sugar a little at a time, to form a firm meringue.
  5. Slowly add the flour gradually and set aside.
  6. Whip the cream and gently fold into the mixture.
  7. Pour the mixture into the cake pan and smooth over the surface.
  8. Sprinkle with plenty of sugar.
  9. Cook for 40 minutes or until a skewer inserted in the center comes out clean.
  10. Leave to cool on a cooling rack and then serve.
