Blancmange is a sweet dessert typically made with milk or cream and sugar and served cold. This variation of White Custard uses a combination of milk and water and employs rice flour and starch as the thickening agents. This custard is not set in a mold but rather shaped by hand and then placed in a dish to be baked for a golden crust on top. Minimalist ingredients make this an elegant, yet simple, dessert option.

Ingredients

  • 250 grams sugar
  • 0.5 liters water
  • 100 grams rice flour
  • 40 grams starch
  • 750 milliliters milk

Directions

  1. Heat sugar in half a liter of water until it forms threads.
  2. Add 300 ml. milk, stir well.
  3. Dissolve flour in the remaining milk, add sugar syrup.
  4. Heat again until thickened.
  5. Once it starts detaching from the walls of the pan, it means it is ready. However, the best way to know if the blancmange is ready is to take a bit of dough, place it on a plate, and as soon as it cools off, see if it unglues well from the dish, and is not sticky.
  6. If it is, heat it up again, if not, don't.
  7. Use two tablespoons to shape small croquette-like pieces, and arrange on a platter or plate.
  8. Put it in the oven to blush, wrapped in wet cloths.

This was a super sweet 4 star dish and I loved the minimal ingredients needs to make it. The instructions were simple to follow and I could see myself making this over and over again. It had a crusty top layer that boasted its overall appeal.
