Not your ordinary truffle, built for white chocolate lovers. Each one will melt in your mouth, releasing blissful sweet smoothness. These beauties are mixed and shaped by hand, and then chilled until firm.

Ingredients

  • 100 grams cookies (speculoos)
  • 60 grams confectioner's sugar
  • 1 egg yolk
  • 1 tablespoon milk
  • 50 grams softened butter
  • 200 grams white chocolate
  • 40 grams cookies (spéculoos)

Directions

  1. In a food processor, grind the speculoos cookies to a fine powder.
  2. Add confectioner's sugar, then mix the eggyolk, milk, and butter.
  3. Mix until smooth.
  4. Transfer to a closed plastic box with a lid in refrigerator for 2 hours.
  5. With your hands, shape small balls and refrigerate for 15 minutes.
  6. Melt the white chocolate and grind the remaining speculoos cookies.
  7. Dip the truffles in white chocolate and roll them quickly in the ground speculoos.
  8. Arrange them on a parchment paper until set.
  9. Set aside in refrigerator until serving time.

This recipe was great because it had a sweet appeal and the true truffle taste, even though I was never a huge white chocolate fan. My next try will be with a dark chocolate and maybe a mix of white.
