Description

Not your ordinary truffle, built for white chocolate lovers. Each one will melt in your mouth, releasing blissful sweet smoothness. These beauties are mixed and shaped by hand, and then chilled until firm.

Ingredients

100 grams cookies (speculoos)
60 grams confectioners sugar
1 egg yolks
1 tablespoon milk
50 grams softened butter
200 grams white chocolate
40 grams cookies (spéculoos)

Directions

1In a food processor, grind the speculoos cookies to a fine powder.
2Add confectioner's sugar, then mix the eggyolk, milk, and butter.
3Mix until smooth.
4Transfer to a closed plastic box with a lid in refrigerator for 2 hours.
5With your hands, shape small balls and refrigerate for 15 minutes.
6Melt the white chocolate and grind the remaining speculoos cookies.
7Dip the truffles in white chocolate and roll them quickly in the ground speculoos.
8Arrange them on a parchment paper until set.
9Set aside in refrigerator until serving time.
