This is a great and easy recipe!! I misread the instructions and accidently added all the cheese (2 cups) to the chicken. I used 1 cup Mexican blend and 2 cups pepper jack, (I used 1 cup of the pepper jact on top of the enchiladas). I also added about a quarter cup of red enchilada sauce to the chicken and cheese mixture since it seemed dry. Since I had them I also added 4 green onions, diced, ontop after the enchiladas cooked for 15 minutes. I may have overstuffed, but I only got 7 enchiladas. I love this recipe and will keep it as an easy week night meal. Thank you so much to the chef of this recipe!!

Hard to make? Really, wow Breckyn, cook much lol.... Extremely easy to make, add 1/2 cup diced white onion for texture and flavor. Tbs of chipotle powder won't hurt either.

this recipe turned out very good! I followed it exactly and really enjoyed it. My husband even liked it which suprised me some because he doesnt normally like anything with sour cream in it.

it turned out great. the recipe says cooked chicken. i coat my chicken in my homade taco seasoning, chilli powder, cumin, garly powder and salt, then pan fry for color and taste. i added some cayanne to the sauce and used corn tortillas, flour tortillas get slimy in my opinion. so i used this as a guide. turned out great!! maybe a new recipe, i always go my own way.
