Wow this turned out absolutely amazing! Followed the recipe exactly but we also added a little bit taco seasoning for extra flavor. We are a family of 4 and 3 are incredibly picky eaters!! (my husband is the biggest picky eater ever!!) We will be making this again!

I've made this recipe multiple times and it's definitely a keeper. It's a nice alternative to taco's for mexican night. The only thing I do differently is that I add a little taco seasoning to the shredded chicken for a little added flavor.

Easy, fast and great for company, really like that it is different from so many Enchillada recipes. It can be add ahead too and popped n the oven just in time to be served and it makes the kitchen smell great.
