Inca, goji berries and cloudberries are paired perfectly in these White Berries, Goji and Inca Cookies. Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar (or yellow)
  • 1 eggs
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup white chocolate (grated)
  • 1 cup berries (inca, goji berry and cloudberry mix, Fold Mix)
  • 1/2 cup walnuts (chopped)

Directions

  1. 1Preheat oven to 180 °C.
  2. 2In a large bowl, whisk the butter until creamy.
  3. 3Add sugar and egg. Mix until well blended.
  4. 4In a bowl, sift flour, baking soda and salt.
  5. 5Add butter, and sugar and egg mixture to flour. Mix well.
  6. 6Using a spatula, mix in chocolate, berry mix, and finally the walnuts.
  7. 7Pour small spoonfuls of dough on a baking tray lined with parchment paper, or a silicone mat, leaving some space between them.
  8. 8Push the berries into the batter.
  9. 9Bake 15 to 18 minutes, or until golden brown.
